Thanksgiving Wild Rice Pilaf

I don’t know about you guys but I am taking the opportunity this year to get creative with meals where we would typically have large family gatherings and keep things simple. Because of COVID and reduced group get togethers I can have some fun with recipes and this Wild Rice Pilaf is a great example! You wouldn’t typically have rice for Thanksgiving but why not switch it up?

Serving Size: 3-4

Ingredients

  • 1.5 Cups Wild Rice, cooked as per packaging

  • 10-12 Brussel Sprouts, cut into quarters

  • 1/3 Cup Dried Cranberries

  • 1/3 Cup Pecan Pieces

  • 1-2 Tsp. JamDinners Turkey Dry Rub Seasoning

  • 1-2 Tsp. Margarine

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

  • 1/2 Tsp. Garlic Powder

Directions

  • Cook the rice as per packaging and while it is cooking, add the margarine to a separate pan, allow it to melt over medium heat then add the brussel sprouts.

  • Lightly season the brussel sprouts with salt, pepper and garlic powder, cover with a lid and cook about 7-8 minutes or until soft and fully cooked.

  • Combine the cooked rice, turkey rub seasoning and brussel sprouts together. Mix well.

  • Add in the pecans and cranberries, mix again and serve! You could always go for a differeny vibe and swap the brussel sprouts for apples or any other vegetable.
