White Wine Curry Mussels

Growing up - seafood was never something I would want but now as an adult, my love for it only grows!

This recipe is surprisingly easy and full of so much flavor!

Prep Time: 20 minutes

Cook Time: 30-40 minutes

Ingredients

  • 1.5kg of Mussels (we used Farm Blue Mussels)

  • 1/2 Cup Shallots, minced

  • 2 Tbsp. Garlic, minced

  • 1.5-2 Cups Dry White Wine

  • 1 Cup Heavy Cream

  • 1 Tbsp. Curry Paste

  • 1/4 Cup Butter

  • 1/4 Cup Parsley, minced

  • Salt & Pepper to taste

Directions

  • In a large saucepan, cook shallots and garlic in simmering wine and butter until translucent. Add a little parsley too.

  • Stir in curry paste and then heavy cream. Mix well throughout the process.

  • Add in more white wine and cook long enough to remove the alcohol.

  • Add in the mussels. Cover, and steam mussels for a 5-8 minutes or until their shells open wide.

  • Transfer steamed mussels to a bowl, with some of the sauce. Pair and serve with homemade garlic bread.

  • Discard any unopened mussels.
