Chick Pea Quinoa Salad

Salad Ingredients
2 cups Quinoa, cooked as per instructions and fully cooled
1 large can of Chick Peas, drained and rinsed
1 Cucumber, hopped
1/2 Red Onion, minced
1/2 Cup Fresh Parsley, finely chopped
1/2 cup roasted/salted Pistachios
1 Cup crumbled Feta Cheese
1 Cup Kale, finely chopped
Salt & Pepper to taste
Lemon Dressing Ingredients
1/2 cup lemon juice
1/2 cup Evoolution Picual EVOO
1 Tbsp. Honey
Salt & Pepper to taste
Dressing Directions
Combine all ingredients together and whisk well. Adjust S&P as needed.
Combine all salad ingredients together in a large bowl and toss with the dressing. Serve cold.
