Chick Pea Quinoa Salad

Prep Time: 20 minutes

Salad Ingredients 

  • 2 cups Quinoa, cooked as per instructions and fully cooled

  • 1 large can of Chick Peas, drained and rinsed

  • 1 Cucumber, hopped

  • 1/2 Red Onion, minced

  • 1/2 Cup Fresh Parsley, finely chopped

  • 1/2 cup roasted/salted Pistachios

  • 1 Cup crumbled Feta Cheese

  • 1 Cup Kale, finely chopped

  • Salt & Pepper to taste

Lemon Dressing Ingredients

  • 1/2 cup lemon juice

  • 1/2 cup Evoolution Picual EVOO 

  • 1 Tbsp. Honey

  • Salt & Pepper to taste

Dressing Directions

  • Combine all ingredients together and whisk well. Adjust S&P as needed.

  • Combine all salad ingredients together in a large bowl and toss with the dressing. Serve cold.
