Waffle Eggs Benny (with Oven Poached Eggs)

I have ZERO excuses as to why this took me so long to create this recipe! We LOVE Eggs Benny in this house and we have the cutest little mini Waffle maker! The waffle maker is awesome and we will sometimes throw together some waffle batter and pre-make a whole bunch then freeze them until we want to use them. That is exactly what we did here.

Serving Size: 4 Eggs Bennies / 2 People

Ingredients

  • 4 Mini Waffles

  • 4 Jumbo Eggs

  • 1 Package Hollandaise Sauce, made as per package instructions

  • 6 Pieces Turkey Bacon, cooked and cut in half

  • Tomato Slices, optional

  • 9 Tbsp. Water

  • 2 Tbsp. Chives, chopped

  • Salt to taste

  • Pepper to taste

  • Cooking Spray

Directions

  • Pre-heat oven to 350F degrees. Using a 6 cup, muffin tin spray all 6 cups with cooking spray. Add 1.5 Tbsp of water to the bottom of each cup then crack an egg into 4 different cups. The water helps the poach the eggs and you want to put water even in the empty ones so they don’t burn.

  • Bake for 10-12 minutes. They will look watery on the top and not fully cooked but trust me they will be!

  • While the eggs are cooking, toast the waffles and then lightly spread margarine on top. Top the toasted waffles with 3 halves of bacon then the poached egg. Drizzle a hearty portion of Hollandaise sauce overtop then sprinkle with chives. Add Valentina’s hot sauce for some extra heat.
