Bruschetta Chicken on Garlic Butter Spaghetti Squash

This meal is the perfect combination of fresh, healthy and heart warming. Seriously delicious. We don’t often cook with Spaghetti Squash because the Mr. isn’t overly fond of it but it is always such a treat when we do! It is a great meal when craving pasta on all the cold evenings headed our way!

Ingredients

  • 1 Spaghetti Squash

  • 2 Chicken Breast

  • 1 Cup Parmesan Cheese

  • 2 Roma Tomatoes, chopped

  • 1/4 White Onion, chopped

  • 5 Cloves of Garlic, minced

  • 3 Tbsp. Margarine

  • 2 Tbsp. Olive Oil

  • 2 Tsp. Garlic Powder

  • Salt to taste

  • Pepper to taste

  • Parsley Flakes to taste

  • Cooking Spray

Directions

  • Pre-heat oven to 350F degrees. Prep the ‘bruschetta’ by combining the chopped onions, tomatoes, 2 gloves of minced garlic and some salt/pepper. Combine well and allow the flavors to mix in the fridge for minimally 30 minutes.

  • Rinse the exterior of the spaghetti squash and stab a couple holes in it. Microwave for 5 minutes.

  • Remove from microwave (carefully because it will be hot!) and cut the top part of the squash off then cut the squash in half length wise.

  • Remove the seeds from the squash. Brush the insides of each 1/2 with olive oil and the sprinkle with salt and pepper. Place face down on a baking sheet and bake 45-50 minutes.

  • Once you’ve placed the squash in the oven, start working on the chicken.

  • Spray a second baking sheet with cooking spray and lay the dried/dabbed chicken on it. Sprinkle both sides of each chicken breast with salt, pepper and garlic powder. Top each chicken carefully with spoonfuls of the bruschetta then top each chicken with about 1/4 cup of parmesan cheese.

  • Bake for 35-45 minutes or until internal temperature of the chicken is over 165F.

  • Once the spaghetti squash is fully cooked, remove from the oven and allow to cool slightly.

  • Melt the margarine in a medium pan over medium heat then add the remaining minced garlic. Using a fork scrap the insides of the spaghetti squash halves creating spaghetti like strings. Scrap it into the pan with the margarine and garlic. Mix well, tossing the squash with the margarine and add remaining parmesan cheese. Once fully combined sprinkle with parsley flakes.

  • Plate spaghetti squash and top with baked chicken. Add additional parmesan cheese if desired.
