Tomato Pesto Tortellini

I absolutely love the Fall and Winter months for meatless mondays .. because pasta dishes make it so darn easy! This Tortellini is a perfect meatless meal with all the ingredients to make sure you are still happy and full!

Ingredients

  • 3-4 Cups uncooked Cheese Tortellini

  • 1 Cup Cherry or Grape Tomatoes, halved

  • 1/2 Cup Parmesan Cheese, shredded

  • 2-3 Tbsp. Pesto

  • 1-2 Tbsp. EVOOlution Spicy Calabrian Pesto Olive Oil

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

  • 1/2 Tsp. Garlic Pepper

Directions

  • Cook Tortellini in a pot of boiling water as per direction. While the pasta is cooking, heat up a pan over medium heat and add the pesto oil. Add the tomatoes and season with salt, pepper and garlic powder.

  • Lightly saute about 5-6 minutes. Once the tortellini is fully cooked, drain and add to the pan of tomatoes. Add in the pesto and combine well. Continue cooking over medium-low heat. add in a little more salt or pepper as needed.

  • Scoop into desired plates/bowls and sprinkle with parmesan cheese so it slightly melts.
