Bacon Cheddar Grilled Cheese

When I think of comfort food I immediately think of grilled cheese! i love a classic grilled cheese but I also love getting creative without too much extra work. This bacon cheddar grilled cheese is the perfect balance of those two things .. creativity and easy!

Ingredients

  • 4 Pieces of Bread

  • 1-1.5 Cups of Tex Mex shredded cheese

  • 4 Slices of Bacon, cooked and halved

  • 4-5 Tbsp. Mayo

  • 1 Clove of Garlic, minced

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Pepper

Directions

  • Combine the mayo and minced garlic well. Spread a thin layer of the mayo on the outside of 2 of the pieces of bread and lay mayo side down on a pre-heated frying pan.

  • Sprinkle half of the cheese evenly on top fo the two slices, then lay 4 halves of bacon on top of each. Sprinkle the remaining half of the cheese evenly on top of the bacon slices. Sprinkle with a little salt and pepper.

  • Lay the other two slices of bread on top and press down slightly. Cook over medium heat until the outside of the bottom pieces of bread start to brown. Right before you are ready to flip, spread the remaining mayo/garlic mixture on the outside of the top pieces. Flip and continue cooking until this new side browns. Remove from the pan, cut in half and serve on their own or with some soup.


MAKE IT EASY - Use butter on the outside of the bread instead of mayo.

MAKE IT EXTRA - Use a fancier cheese like gruyere and smoked cheddar to replace the tex mex.

MAKE IT VEGETARIAN - Omit the bacon or swap it for a meatless replacement.
