3 Cheese Baked Penne

Yummmm. Baked pasta. And cheese. And more cheese. Who even needs meat in this dish? We sure don’t! This is absolutely perfect for a meatless Monday!

Ingredients

  • 2-3 Cups Penne Noodles

  • 1.5 Cups Cheddar Cheese, shredded

  • 1 Cup Mozza Cheese, shredded

  • 1 Cup Parmean Cheese, shredded

  • 1/2 Cup Cream

  • 1/2 Cup Vegetable Broth

  • 1/2 White Onion, chopped

  • 2 Roma Tomatoes, chopped

  • 2 Tsp. Garlic Powder

  • 2 Tsp. Salt

  • 2 Tsp. Pepper

  • 1 Tsp. Flour

  • 1 Tsp. Oregano

  • Garlic Powder

  • 1 Tsp. Truffle Salt

Directions

  • Pre-heat oven to 350F degrees. Cook the penne noodles as per packaging then drain and set aside.

  • In a large skillet, melt the margarine and add the onions with a little salt and pepper. Saute about 5-6 minutes or until translucent. Add garlic powder and oregano. Add the flour and whisk well.

  • Slowly add the cream and vegetable broth. Mix well. Bring to a slight boil, add in additional salt and pepper then mix in the penne noodles.

  • Spray a casserole dish with cooking spray then scoop in the mixture. Mix in 2/3 of the cheeses and sprinkle with the truffle salt. Top with remaining cheese and bake a minimum of 20 minutes or until cheese is melted and browning on the top. Broil on LO for 5 minutes at the end to help brown the top.
