Garlic Roasted Sweet Potatoes
I am sure I have shared this before but growing up I was not a fan of sweet potatoes. I always thought it was the weirdest side dish for a family dinner. I could not for the life of me understand why people liked them. Then as I got older the introduction of sweet potato fries with a delicious aioli really expanding my thinking lol. Now I LOVE sweet potatoes! I don’t integrate them into our meals as often as I would like but boy are they good. These garlic roasted ones are a perfect side dish for just about any meal.
Ingredients
1 Large Sweet Potato, peeled and cut into 1 inch cubes
1/2 Cup Parmesan Cheese
1/2 Cup Margarine, melted
2-3 Tsp. Garlic Powder
2-3 Tsp. Pepper
1-2 Tsp. Salt
1-2 Tsp. Parsley Flakes
Directions
Pre-heat oven to 400F degrees.
Combine all ingredients (except parmesan cheese) in a large bowl and mix well. Spread out onto a baking sheet in a single layer. Sprinkle parm cheese on top.
Bake for 30-45 minutes, flipping 1/2 way through to get crispiness.
Bake longer if desired or broil on LO to help achieve desired crispiness.
