Fully Loaded Potato Soup
Who doesn’t love a FULLY LOADED Potato Soup? This soup has all the tasty goodness you want in a potato soup. It does not disappoint. Please do not even think about focusing on your calorie intake on the day you choose to eat it .. you will regret that part of it so don’t even bother!
Ingredients
4-5 Large Russet or White Potatoes, peeled and cut into 1 inch cubes
3-4 Cups Milk or Cream
1-2 Cups Chicken Broth
1 Cup Cheddar Cheese, shredded
3/4 Cup Sour Cream
1/4 Cup Flour
1/2 Pack of Bacon, cooked and chopped
1/2 Red or White Onion, chopped
6-7 Cloves of Garlic, minced
3-4 Tsp. Salt
3-4 Tsp. Pepper
Green Onion and Crispy Onions for garnish
Directions
Using 1-2 Tbsp. of the bacon grease add the onion to the large pot and season lightly with salt and pepper. Cook until translucent, about 5-6 minutes. Add in the flour and mix well.
Whisk in the milk/cream slowly, ensuring there are no clumps. Add in the chicken broth, garlic and potato cubes.
Turn the heat up to medium-high heat and bring to a slight boil. Reduce the heat, cover and cook about 20 minutes ensuring the potatoes become very tender/soft.
Once the potatoes have cooked and are very soft, use an immersion blender to mash the potatoes until almost fully smooth. Add in the sour cream, 3/4 of the bacon and 3/4 of the cheddar cheese. Mix well.
Season with additional salt and pepper as desired.
Serve up with ALL of the garnishes (remaining cheese and bacon as well as green onion and crispy onion). Serve in a bread bowl to really go the extra mile!
