Taco Stuffed Pasta Shells
I love tacos and anything really remotely close to them (Fajitas, Burritos, Quesadilla etc). It doesn’t matter, I love them all. The problem is tacos are one of Mark’s least favorite meals (don’t ask me why) so when I am craving tacos I have to get creative. So, lucky enough for me, Pasta happens to be one of Mark’s favorite meals and it is incredibly easy to combine the two.

Ingredients
1 Lb Ground Meat (I prefer Ground Chicken)
1/4 of a White Onion
1 Tbsp. Olive Oil
4 Tbsp. of Salsa
15-20 Large Pasta Shells
1.5 Cups Tex Mex Cheese
Salt & Pepper to taste
Garlic Powder to taste
Directions
Pre-heat over to 350F degrees. Add olive oil to a pan and heat over medium heat. Chop up onion then add to pan with Ground Chicken. Season the chicken with salt, pepper & garlic powder. In the mean time boil/cook the pasta shells until soft.
Add the Salsa to the chicken pan when it is almost fully cooked. Mix and let simmer. Add 3/4 cup of cheese to the meat/salsa pan and mix up.
Once the pasta is cooked, drain and place the shells in a baking pan. Scoop out the meat evenly into shells. Top the shells with the remaining cheese and place in the oven. Bake 10 minutes or until cheese has melted. Remove from the oven and garnish with salsa sour cream, lettuce or avocado.
