HOLY EFF - SO DARN GOOD! What a great way to make a healthier meal a little more creative. Such great flavours and a great dinner option.

Ingredients

  • 8-10 Romaine Leaves, rinsed

  • 300g Extra Lean Ground Beef

  • 3-4 Cloves Garlic, minced

  • 3/4 Cup Shredded Carrots

  • 3/4 Cup Thinly Cut Cucumber

  • 3/4 Cup Red Onion, (1/2 Cup sliced, 1/4 Cup chopped)

  • 1/2 Cup Kimchi

  • 1/4 Cup Green Onion, chopped

  • 1/2 Cup Sweet Chili Sauce

  • 1-2 Tbsp. Soy Sauce

  • 1-2 Tsp. Sriracha Sauce

  • Sesame Seeds, optional

Directions

  • Heat up a medium pan over medium heat and add the ground beef. Cook over medium heat about 5 minutes. Add in the chopped red onion and minced garlic. Continue cooking about another 5 minutes.

  • Add in the soy sauce and sweet chili sauce. Mix well. Continue cooking until beef is cooked fully.

  • Remove from heat, filly the spine of the romaine leaves with a spoonful or so of ground beef then add all desired toppings. Drizzle with extra Sriracha sauce for extra heat too.

MAKE IT EASY - Omit the Kimchi and use garlic powder instead of minced garlic.

MAKE IT EXTRA - Use butter lettuce instead of romaine and ground the beef yourself.

MAKE IT VEGETARIAN - Swap the ground beef for a ‘Beyond Meat’ style ground protein or substitute chopped portobello mushrooms.
