1 Pan Shrimp Fajitas

With the ask around here for easy and FAST meals …. you know we had to throw in a 1 Pan Shrimp Fajita meal! Although the veggies take some time to cook in the oven, the actual time needed to prep/work is very minimal.

Ingredients

  • 16-20 Large Shrimp or 20-30 Medium Shrimp, deveined

  • 1 Red Pepper, sliced

  • 1 Green Pepper, sliced

  • 1/2 Red Onion, sliced

  • 1 Yellow Pepper, sliced

  • 1 Jalapeno (Optional)

  • 5-8 Small Soft Tortillas

  • 2-3 Tsp. EVOO Dried Chabbani Oil

  • Salt, Pepper, Garlic Powder & Paprika to taste

  • Cooking Spray

Directions

  • Pre-heat oven to 350F degrees. Spray a baking sheet with cooking spray, lay out the vegetables and season lightly with salt and pepper. Bake for 5-10 minutes.

  • While the veggies are cooking, toss the shrimp in a little bit of the EVOO oil, then season the shrimp with salt, pepper, garlic powder and paprika. Remove the veggie pan from the oven, make room for the shrimp and return the pan to the oven.

  • Bake until shrimp are fully cooked. About 10 minutes. Remove pan from the oven.

  • Toss the veggies and the shrimp together then fill a tortilla with any other desired toppings (salsa, cheese, sour cream etc)


MAKE IT EASY - Opt to buy pre-cooked shrimp and just add them to the pan with a little seasoning with 5 minutes left in cooking the vegetables.

MAKE IT EXTRA - Use one of our JamDinners seasonings like the Creole, Cajun or Taco.

MAKE IT VEGETARIAN - Omit the Shrimp and do veggie fajitas or swap for a meatless protein.
