Smashed Potatoes

Have you ever had smashed potatoes? They are such a great way to switch up potatoes and they are a crowd pleaser when you make them. My dad tried our leftovers the first time we made them and even he couldn’t believe how damn good they were .. and those were leftovers! They are super simple and perfect for BBQ season.

Prep Time: 15 minutes

Cook Time: 60 minutes

Serves: 3-4

Ingredients

  • 1 Bag of Small Potatoes, rinsed

  • 1/2 Cup Parmesan Cheese or Mozza, shredded

  • 4-6 Garlic Cloves, minced

  • 1/2 Cup Butter

  • 1/2 Cup Chives or Green Onion, chopped

  • 2 Tbsp. Olive Oil

  • 2-3 Tsp. Evoolution Garlic Infused EVOO

  • 2 Tsp. JamDinners Signature Blend

Directions

  • Pre-heat the oven to 400F degrees.

  • In a large pot on the stove boil the potatoes until fully cooked, drain the water and dab dry.

  • While the potatoes are boiling, combine the minced or zested garlic together in a small pot with the butter and garlic EVOO. Melt the butter over medium heat and allow the flavors to come together over low heat.

  • Line a large baking sheet with a silicone baking sheet or spray with cooking spray Lay the potatoes out, smash down lightly with the bottom of a small cup to flatten but ensure the potatoes stay in tact.

  • Season with JamDinners Signature blend and generously brush the butter/garlic mixture over the potatoes and bake for 15-20 minutes.

  • Remove from the oven, flip them, brush lightly with more butter then sprinkle with cheese and return to the oven. Broil on LO for another 10 minutes then remove.

  • Plate, then top with chopped chives or green onion and serve.
