Egg Salad Pitas

I love egg salad. It is one of those foods you couldn’t stand as a kid (or at least I couldn’t) and now I seek it out at catered lunches during corporate functions HAHA!

Prep Time: 20 minutes

Cook Time: 6 minutes

Serves: 2

Egg Salad Ingredients:

  • 4 Hard Boiled Eggs

  • 1 Tsp. Mustard

  • 2 Tbsp. Mayonnaise

  • 25g (or about ⅓ cup) White Onion, chopped

  • 17g (or about ¼ cup) Green Onion, chopped

  • 1 Tsp. Picual Extra Virgin Olive Oil

  • 1 Tsp. Celery Salt

  • 1 Tsp. Black Pepper

Pita Chips Ingredients:

  • 2 Pitas, cut into even triangles

  • 1-2 Tsp. Picual Extra Virgin Olive Oil

  • 1-2 Tsp. Salt

Egg Salad Directions

  • Combine all ingredients together in a medium bowl, mix well and refrigerate a minimum of 1 hour. Serve with Pita Chips.

Pita Chips Directions:

  • Drizzle the Picual EVOO overtop of the pita chips. Sprinkle with salt. Broil on LO for 4-6 minutes or until crispy.
