Rice Krispie Birds Nests

Easter is almost upon us and I love everything that comes with it .. the pastel colors, the family time, the warmer weather and of course … the treats! These are super easy to make and a great ‘baking’ activity to complete with your children.

Plus .. you can eat all the extra mini eggs during the process and let’s be honest, those are pretty darn delicious!

Ingredients

  • 5-6 Cups Rice Krispies

  • 2-2.5 Cups Mini Marshmallows

  • 1/4 Cup Margarine

  • 1 Cup Butter Cream Icing

  • 1/2 Cup Shredded Unsweetened Coconut

  • 18-30 Mini Eggs

  • Green Food Coloring

  • Yellow Food Coloring

Directions

  • Melt the margarine in a large pot over medium heat then add in the marshmallows. Mix until soft and gooey then add in the rice krispies and mix well again.

  • Once this is mixed well, lightly grease a couple muffin tins and scoop out the mixture into the muffin tins, filling about 2/3 full.

  • Using your fingers or the back of a spoon, push down the center of each cup, creating a sort of bowl then set aside.

  • Combine the yellow food coloring and butter cream icing together and mix well. Set aside.

  • In a medium bowl, combine the shredded coconut and a couple drops of the green food coloring. Add as much or as little as you want and mix well.

  • Add a small dollop of butter cream icing to the top/middle of each rice krispie cup to help the shredded coconut stay in position.

  • Spoon even amounts of the green coconut into each rice krispie cup on top of the yellow butter cream icing then add 3-4 mini eggs to each cup to make it look like a birds nest.

  • Store in the fridge to ensure the rice krispies stay together, and pull out as needed before eating!
