Cheesy Scalloped Potatoes
Given we are still in a pandemic and holiday gatherings are still not a thing … we are continuing to step outside of the box with side dishes. Although scalloped potatoes are not an “outside of the box” side dish .. having them for a big family Easter dinner is not the place you usually enjoy them. Easter and other major holidays are typically a mashed potato dinner. These potatoes are BOMB though and we are excited to be enjoying them this year.
Ingredients
4 White Potatoes, thinly sliced
2 Cups Milk
1.5 Cups Cheese (we used 1/2 Cheddar & 1/2 Mozza), shredded
1/2 White Onion, chopped
3 Tbsp. Margarine
3 Tbsp. Flour
2-3 Tsp. Garlic Powder
2-3 Tsp. Pepper
1-2 Tsp. Salt
1-2 Tsp. Parsley Flakes

Directions
Pre-heat oven to 400F degrees. Thinly slice the potatoes and stand them up on an angle in a lightly greased casserole dish. Sprinkle the chopped onion on to the potatoes, I usually try to ensure a piece of onion or two end up between each slice of potato so that they don’t stick together and cook evenly.
Season generously with salt, pepper & garlic powder.
In a medium sauce pan, melt the margarine then add in the flour. Mix well using a whisk. once combined well, slowly pour in the milk and continue to whisk.
Add in the shredded cheese slowly. Continue whisking. Once cheese is melted add in some additional salt, pepper & garlic powder.
Pour the cheese over the scalloped potatoes evenly then bake for 75-90 minutes or until potatoes are fully cooked and you can easily stick a fork through them.
Broil on LO briefly to evenly brown the top if desired. Remove from the oven and sprinkle with dried parsley then serve.
