Raspberry Mandarin Salad

Classic and original summer salads are the way to go when the weather os 30+ degrees! They are always light and refreshing and offer so much room for creativity! This salad is no different! A little creativity and a spin on our Christmas salad with a summer vibe … and so easy!

Ingredients

  • 4 Cups of Spring Mix

  • 2 Chicken Breast, seasoned with salt & pepper and cooked until 165F degrees internal temperature

  • 1/2 Cucumber, spiralized and cut into 8-10 equal portions (okay you don’t have to spiralize the cucumber but it was so fun and provided a nice twist!)

  • 3/4 Cup Fresh or Canned Mandarins

  • 3/4 Cup Fresh Raspberries

  • 3/4 Cup Poppy Seed Dressing

  • 1/2 Cup Feta Cheese

  • 1/2 Cup Slices Almonds and/or Pumpkin Seeds

Directions

  • Once the chicken is cooked and slices, split the ingredients evenly between 2 large bowls, add the chicken and add the dressing then voila!
