Greek Veggie Wraps

It is so easy to come up with healthy summer MEATLESS recipes like these Greek Veggie Wraps! They are so darn good too!

Serving Size: 2 Wraps

Ingredients

  • 2 Tortillas

  • 1.5 Cups of Lettuce, rinsed and shredded

  • 1/2 Cucumber, sliced

  • 1/2 Red and/or Green Pepper, sliced

  • 1 Tomato, chopped

  • 1/2 Cup Feta Cheese

  • 1/2 Cup Kalamata Olives

  • 1/2 Red Onion, sliced

  • 4 Tbsp. Garlic Hummus

  • 2 Tbsp. Olive Oil

  • 1 Tsp. Pepper

  • 1 Tsp. Oregano

  • 1 Tsp. Garlic Powder

  • 1/2 Tsp. Salt

Directions

  • In a small dish, combine the olive oil, salt, pepper, garlic powder and oregano, mix well.

  • In medium bowl, combine all the veggies except the cucumber and toss together. Add in the olive oil and continue tossing to lightly coat the veggies.

  • Lay out the tortillas and spread the hummus equally in the middle of each tortilla. Evenly split the veggie mix on top of the tortillas, over the hummus.

  • Top with the slices of cucumber then sprinkle with the feta cheese. Sprinkle with additional pepper if desired. Roll it up and fold in the ends! Feel free to grill up in a panini press also if you want!

  • Serve with a greek salad even!
