Leftover Pulled Pork Rice Bowl

So your hunny spent hours yesterday smoking the largest most tender pork shoulder you ever had. He basically spent his entire day checking on the meat, ensuring it was absolutely perfect. The only problem … you now have SO much pork leftover you don’t know what to do with it all. Well, this Pulled Pork Burrito Bowl is the perfect way to enjoy the pork in a unique way.

Serving Size: 2 Bowls

Ingredients

  • 2 Cups Pulled Pork

  • 2 Cups Cooked Rice

  • 2 Cups Coleslaw

  • 1-2 Cup Mushrooms, sliced

  • 1/2 Cup Red Onion, sliced

  • 1/2 Cup Green Onion

  • 1/3 Cup Sriracha Mayo (or sauce of choice)

  • 2 Tbsp. Soy Sauce

  • 1 Tbsp. Worcestershire

  • 1 Tsp. Garlic Powder

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions

  • Start by sauteing the mushrooms and onions in a medium sauce pan or over medium-high heat with the spices, soy sauce & Worcestershire!

  • In a separate pan on the stove, in the oven or on the BBQ, re-heat the leftover pulled pork until desired temperature is achieved. We opted for re-heating in a pan on the BBQ. It was perfect. Once complete, combine with the sauteed vegetables.

  • Split the rice and coleslaw into 2 equal portions and scoop each portion into a bowl. Top with the pulled pork/mushroom mixture. Sprinkle with green onion and drizzle with sriracha mayo. Easy Peasy.
