Oven Baked Chicken Parm
I had been craving chicken parm for a really long time but I wanted a slightly healthier version versus the deep fried one so we decided to oven bake them instead and they were JUST as good.

Ingredients
2 Chicken Breast
2 Handfuls of Spaghetti, cooked as per packaging
1 Egg
3/4 Cup Panko Bread Crumbs
2-4 Tsp. Italian Seasoning
1 Tsp. Salt
3/4 Cup Marinara Sauce
2-3 Cloves of Garlic, minced
4-8 Slices of good quality White Cheese of choice (We Used Jalapeno for a little kick)
Directions
Pre-heat the oven to 375F. Beat the egg in a medium bowl. Combine the bread crumbs and 1/2 of the Italian Sesoning and Salt on a small plate. Dredge each chicken breast in the egg mixture than coat evenly in thr brea crumb mixture.
Place the chicken breast on a lightly greased baking sheet and bake for approx 30 minutes.
While the chicken is cooking, add the marinara, garlic and italian seasoning in a small pot and simmer over low heat.
Cook the spaghetti as per packaging also.
Once the chicken is fully cooked, remove from the oven and scoop generous portions of the marinara on top of each chicken breast then lay a single layer of cheese across the top with a slight overlap.
Do not shred the cheese and make sure you choose a good quality white cheese because the way it melts is so important.
Return to the oven and broil on LO approx. 5 minutes then on HI until golden brown.
Serve on a bed of pasta and sprinkle with fresh chopped parsley and black pepper.
