Chicken Bacon Ranch Carbonara

We got these Chicken Bacon Ranch Sausages from Lee’s Gourmet and knew they were the perfect addition to a carbonara …. and guess what? We were right.

Ingredients

  • 4 Chicken Bacon Ranch Sausages

  • 2 Cups Dried Cavatappi Pasta, cooked as per packaging

  • 1/2 Pack of Bacon, chopped and fully cooked (set aside)

  • 3/4 Cup Parmesan Cheese

  • 1 Full Egg + 4 Egg Yolks

  • Salt & Pepper to taste

  • Fresh Parsley for garnish

Directions

  • Save a couple tsp. of the bacon grease and set aside. Cook the sausages in a frying pan until 160F internal temperature, remove from heat and slice. Return to pan and lightly crisp up.

  • Beat the eggs together in a large bowl and set aside. Remove the pasta from heat, scoop out 1/2 cup of the pasta water and set aside. Drain the pasta and then add to the egg bowl as quickly as possible after draining. Toss lightly in the eggs, add in the parmesan cheese, bacon grease and a little pepper. Add in the pasta water if too thick.

  • Toss in the bacon and sausage and mix well.

  • Portion out for eating and garnish with fresh parsley and any remaining parmesan cheese. Voila.
