Soft Chewy Oatmeal Cookies

These cookies had to be my FAVORITE cookie I ever baked that ended in disappointment LOL. I mastered this recipe and was so unbelievably happy with how they turned out. They were soft and chewy and seriously amazing. Then here I am, in the kitchen so excited to show them off to the Mr. when he gets home from work and he comes home, tries them and said he prefers them to be rock hard (they are better for dipping in milk is his reason) ……WHAT IN THE ACTUAL EFF? His idea of the perfect oatmeal cookie is like the Dad’s Oatmeal cookies you can buy. I was so crushed lol. I couldn’t believe how well they turned out that I was over the moon excited and this bugger comes home and tells me he likes them hard and wants me to put them in the oven longer …. OH MAN LOL! I put a few in the oven and over-cooked for him but I left the rest as their beautiful selves and that is the recipe I am sharing with you.

Serving Size: 24 Cookies Approx.

Ingredients

  • 1.5 Cups Quick Oats

  • 1 Cup Flour

  • 1/2 Cup Margarine

  • 1/2 Cup Brown Sugar

  • 1/2 Cup Sugar

  • 1 Large Eggs

  • 1 Tsp. Vanilla

  • 1 Tsp. Cinnamon

  • 1/2 Tsp. Baking Soda

  • 1/2 Tsp. Salt

  • 1/4 Tsp. Baking Powder

Directions

  • Pre-heat oven to 375F degrees and line 2 medium-large baking sheets with a silicone liner or parchment paper.

  • In a medium bowl combine baking soda, baking powder, salt, flour and cinnamon and mix.

  • In a separate bowl, combine softened butter with both sugars and mix well using a had mixer. Add in the egg and vanilla.

  • Add bowl of dry ingredients to bowl of wet ingredients and ensure it is fully mixed well. Lastly add the oatmeal and continue to mix well.

  • Roll dough into balls about 2 inches in size and lay out on the baking sheet with enough room between each.

  • For really soft and chewy, bake for 8-10 minutes or until the top has set then remove. If you want them to cook a little longer allow them to cook for 10-12 minutes. Remove from the oven and allow to cool slightly before eating or moving.
