Cauliflower Flatbread

Footballs Sunday’s are full of bad food … well delicious food but bad-for-you food. So it is good to switch it up once in awhile for something a little healthier. Cauliflower Flatbread is a great substitute and still incredibly tasty. Serve it up with a fresh bowl of marinara sauce.

Ingredients

  • 1 Head of Cauliflower

  • 1 Cup Parmesan Cheese

  • 1 Cup Mozzarella Cheese

  • 1 Egg

  • 2-3 Tbsp. Garlic Powder

  • 2-3 Tsp. Italian Seasoning

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1-2 Chili Flakes

Directions

  • Pre-heat the oven to 425F degrees.

  • Chop the cauliflower into florets and place into a food processor. Pulse until very fine. Dump into a glass bowl and microwave for 4 minutes.

  • Remove from the microwave and using excessive paper towel or a clean dish towel, place transfer to cauliflower to the center of the towel, wrap the towel around and squeeze all excess water out of the cauliflower.

  • Once excess water is removed and cauliflower has cooled, transfer back to a medium bowl.

  • Add the cheese, egg, garlic powder, salt, pepper and italian seasoning.

  • Combine well. Lay a large piece of parchment paper out on a large baking sheet and then flatten the cauiflower mix out on the parchment paper. Ensure the cauliflower mix is onyl about 1/4-1/3 inch thick. Sprinkle the chili flakes and additional italian seasoning on top.

  • Bake 20-22 minutes. Broil on LO for another 7-10 minutes or until top is golden brown. Serve with marinara.
