Double-Take Mother's Day Pancakes

What better way to celebrate the amazing women in our lives then with a delicious homemade brunch? My mom is the shit and she deserves the absolutely best.. Lucky for me she enjoys my cooking so when I ask to host a Mother’s Day brunch for her, she is ALWAYS down! I have 2 amazingly easy Pancake recipes - Blueberry & Cinnamon.

Serving Size: 2-4

Basic Batter Ingredients

  • 1 1/2 Cups Flour

  • 2 Tsp. Baking Powder

  • 2 Tbsp. Sugar

  • 1 Tsp. Baking Soda

  • 1/2 Tsp. Salt

  • 1 Cup Milk

  • 2 Eggs

  • 1/4 Cup Butter, melted

Option 1: Cinnamon Pancakes - add 2 Tbsp. Cinnamon

Option 2 : Blueberry Pancakes - add 1 Cup Fresh Blueberries

Directions

  • Mix all dry ingredients together (add cinnamon here if doing Option 1). Add in wet ingredients and mix well. If going with Option 2 - add blueberries after all other ingredients have been mixed well.

  • Scoop out pancake batter onto a heated pan, about 1/2 cup at a time. Cook until pancake bubbles then flip and cook the other side 3-5 minutes or until golden brown on both sides.

  • Serve with syrup and a sprinkle of cinnamon or whip cream and some fresh fruit.
