JJ's Breakfast Poutine

Although I can whip together a delicious batch of pancakes or yummy yogurt cups, I am a salt fanatic and prefer savory breakfasts versus sweet ones. There are endless possibilities with this Breakfast Poutine and you can personalize it however you wish! It does take a little time as some of it is done in stages but it is fairly simple when it all comes together.

Ingredients

  • 2 Eggs

  • 1 Bag Frozen Tater Tots, cooked as per directions on the bag

  • 1 Cup prepped Hollandaise Sauce

  • 3/4 Cup Shredded Cheese

  • 6 Slices Turkey Bacon, cooked & chopped

  • 1/2 Cup Green Onions, chopped

  • 1 Tomato. chopped

  • 1 Cup Mushrooms. chopped & sauteed

  • 1/2 Cup White Onion, chopped & sauteed

Directions

  • Cook eggs in a heated frying pan, sunny side up. While the eggs are cooking fill 2 bowls with equal portions of the tater tots first then cooked bacon and vegetables. Place 1 egg on top of each then sprinkle with cheese and top with hollandaise sauce. You can literally substitute your meats for sausage, ham or bacon and you can substitute the tater tots for hashbrowns or wedges. Enjoy!
