Mini Egg Blondies
We clearly love blondies around these parts. The base ingredients are identical to a cookie and if I flatten them in a pan then I don’t have to worry about the cookies turning out in a great shape lol. It was a no-brainer to pull together these mini-egg blondies for Easter.
Ingredients
1.25 Cups of Flour
1-2 Cups Mini Eggs
1 Cup Chocolate Chips
2/3 Cup Brown Sugar
2/3 Cup White Sugar
1/2 Cup Chocolate Chips
1/2 Cup Peanut Butter
1/4 Cup Melted Butter
3 Eggs
1 Tsp Vanilla
1 Tsp. JamDinners Cinnamon Spice
1 Tsp. Baking Powder
1/2 Tsp. Salt
Directions
Pre-heat oven to 350F degrees.
In a stand mixer (or a large bowl with a hand mixer) combine both sugars, the melted butter, vanilla and eggs. Mix until fully combined and smooth.
Add in the flour, cinnamon spice, baking powder and salt slowly to the mixer and combine well.
Using a large spatula, fold in the chocolate chips and the mini eggs.
Spray a 13x9 pan with the cooking spray and pour the batter into the pan. Bake for 30-35 minutes or until top/edges are golden brown and an inserted toothpick comes out clean. Allow to cool then cut into squares and serve.
Once cooled, cut into even squares and serve.
MAKE IT EASY - Double the base recipe and make a large batch of dough mixture and split into equal portions to do more than 1 flavor/style.
MAKE IT EXTRA -Get crazy with the mini eggs styles you want to add .. maybe even add some of those mini Cadbury cream eggs!
