Mini Egg Blondies

We clearly love blondies around these parts. The base ingredients are identical to a cookie and if I flatten them in a pan then I don’t have to worry about the cookies turning out in a great shape lol. It was a no-brainer to pull together these mini-egg blondies for Easter.

Ingredients

  • 1.25 Cups of Flour

  • 1-2 Cups Mini Eggs

  • 1 Cup Chocolate Chips

  • 2/3 Cup Brown Sugar

  • 2/3 Cup White Sugar

  • 1/2 Cup Chocolate Chips

  • 1/2 Cup Peanut Butter

  • 1/4 Cup Melted Butter

  • 3 Eggs

  • 1 Tsp Vanilla

  • 1 Tsp. JamDinners Cinnamon Spice

  • 1 Tsp. Baking Powder

  • 1/2 Tsp. Salt

Directions

  • Pre-heat oven to 350F degrees.

  • In a stand mixer (or a large bowl with a hand mixer) combine both sugars, the melted butter, vanilla and eggs. Mix until fully combined and smooth.

  • Add in the flour, cinnamon spice, baking powder and salt slowly to the mixer and combine well.

  • Using a large spatula, fold in the chocolate chips and the mini eggs.

  • Spray a 13x9 pan with the cooking spray and pour the batter into the pan. Bake for 30-35 minutes or until top/edges are golden brown and an inserted toothpick comes out clean. Allow to cool then cut into squares and serve.

  • Once cooled, cut into even squares and serve.
