Italian Potatoes

Why not switch up the classic mashed potatoes for your next holiday dinner and go for something really simple but extra flavorful?

I mean COVID restrictions are basically gone (don’t jinx it Jessica) and we are headed back to some sort of normalcy so why not celebrate with a good ol’ holiday dinner!

These are a great way to incorporate our Italian Seasoning also.

Ingredients

  • 2/3 Bag of Baby Yellow Potatoes, halved or quartered

  • 2 Tbsp. EVOO Milanese Olive Oil

  • 1 Tbsp. Vegetable Oil

  • 2-3 Tsp. JamDinners Italian Seasoning

  • 2 Cloves of Garlic, minced

Directions

  • Pre-heat oven to 375F degrees. Toss the potatoes in a medium-large bowl with vegetable oil and 1-2 Tsp. of our Italian Seasoning. Spread in a single layer on a tinfoil lined baking sheet.

  • Bake for 30-45 minutes or until potatoes are softened. While the potatoes are cooking, combine the EVOO oil, the garlic cloves and the Italian seasoning.

  • Once potatoes are basically fully cooked, remove from oven drizzle the garlic/oil/seasoning mixture and return to the oven for 4-6 minutes.

  • Serve with a delicious pork or ham main dish and gravy! We specifically love using the Bone to Broth gravy!


MAKE IT EASY - Use extra granulated garlic instead of fresh garlic if you don’t have any or if you are in a hurry.

MAKE IT EXTRA - Add some parmesan cheese and brush the oil/spices first then sprinkle with parmesan cheese and bake. You can even add some fresh herbs/spices to bring out extra flavor.
