Medi Flatbread

This medi-flatbread might be one of my most favorite recipes I have ever created! It is so darn delicious I seriously want to eat it EVERY night! Incredibly simple to make and on the healthier side. How can we go wrong? I cannot say enough good things about this dish. Feels like a fresh summer meal but it can be enjoyed during cold days as well.

Sauce Ingredients

  • 1/2 Cup Plain Greek Yogurt

  • 1/4 Cup Greek Salad Dressing

Ingredients

  • 2 Naan Breads

  • 1 Cup Feta Cheese

  • 3/4 Cup Greek Sauce

  • 1/2 Cup Black Olives, sliced

  • 1/2 Red Onion, sliced

  • 2 Roma Tomatoes, sliced

  • 1/2 Red Pepper, sliced

  • 1 Tbsp. Olive Oil

  • 1 Tsp. Oregano

  • 1 Tsp. Red Chili Flakes

  • Arugula for garnish

  • Salt & Pepper to taste

Directions

  • Pre-heat oven to 375F degrees. Combine the sauce ingredients, add additional salt & pepper if desired. Dress the flatbread with desired ingredients, starting with the greeak sauce. Add all ingredients except the arugula and spices.

  • Brush the exposed crust with olive oil then sprinkle with Oregano.

  • Sprinkle entire pizza with red chili flakes, salt & pepper.

  • Bake for 15-20 minutes or until cheese is melted and the bottom of the flatbread is browning.

  • Remove from the oven, add the arugula on top and broil for 3-4 minutes on LO.

  • Cut and serve.
