Marlene's Salsa w/ Heat

I adore family recipes that get passed down and I have found that since I have been on this food/recipe blog journey I seek family recipes more and more! Marlene is my grandpa’s wife they got married this year (so adorable!) and she has been so eager to share things with us! She has shared her sewing and has made us casserole carriers and aprons as well as her food! She enjoys cooking as much as I do. She shared this recipe with my sister and the rest of us! I was so excited to make it that Mom and I planned a day together to do it! Such a blast!

Serving Size: 10-12 Pints

Ingredients

  • 12 Cups Roma Tomatoes, chopped

  • 4 Cups White Onion, chopped

  • 3-4 Large Red Peppers, chopped

  • 1-2 Cup Hot Peppers, chopped

  • 2 Bulbs Garlic, minced

  • 1/2 Cup Fresh Parsley

  • 1 Cup Vinegar

  • 3 Cans Tomato Paste

  • 3 Tbsp. Sugar

  • 2 Tbsp. Salt

  • 2 Tbsp. Pepper

Directions

  • Pre-heat oven to 225F degrees. Combine all ingredients in a large pot and cook until thickened, about 40-60 minutes on medium-high heat. Pour hot salsa into hot/sanitized jars and seal lids.

  • Do not fully seal lids. Tighten enough and allow for the lids to pop prior to fully tightening the jars.
