Fresh Quinoa and Chick Pea Salad

I take every opportunity when I am alone to make fresh salads using chick peas or quinoa or both. The Mr. does not particularly like either of those so it is an incredible waste to do it when hes going to be home. I just love cutting fresh veggies and adding a little salt, pepper and olive oil. So refreshing and healthy for you, all while being very filling.

Ingredients

  • 2 Cups Chick Peas

  • 1 Cup Quinoa, cooked

  • 1/2 Red Pepper, chopped/sliced

  • 1/2 Cucumber, sliced

  • 1/2 Cup Red Onion, chopped

  • 1/2 Cup Fresh Parsley, chopped

  • 3 Tbsp. Olive Oil

  • 1.5 Tsp. Lemon Juice

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions

  • Combine all ingredients in a large bowl and mix together well. Enjoy right away or save in the fridge for a ma of 2 days depending on how ripe your vegetables are.
