Mama's Hot Pepper Jelly

Mama made HPJ numerous times as a kid and I kept thinking it was the weirdest thing. Obviously as I got older, I realized how actually delicious Hot Pepper Jelly is! We serve it in our house with a cracker, some cream cheese and the HPJ! It is PERFECTION!

Serving Size: 5-6 Cups

Ingredients

  • 4 Large Sweet Red Peppers

  • 3-4 Cups Sugar

  • 1-2 Small Red Hot Pepper

  • 1-1/4 Cups White Vinegar

  • 1 Box Certo Pectin

Directions

  • Wash, dice and puree the peppers in a blender or ninja. Mix the peppers, vinegar and 1/2 the sugar together in a large sauce pan and bring to a boil. Lower heat and simmer for approximately 30 minutes. Add the certo and remaining sugar and mix well. Bring to a boil again. Boil for 1 minute and stir constantly. Remove from heat and skim off any foam then pour into sanitized jars and seal.
