Lemon Poppy Seed Scones
As you have likely read before, I love anything Lemon Poppy Seed. Cakes, muffins and yes … scones are no exception. Lemon Poppy Seed Scones are the bomb and super easy!
I could crush these all day but they aren’t the healthiest for you so maybe I will stick to just treating myself with them on occasion.
Scone Ingredients
2 Cups Flour
1/3 Cup Sugar
1/3 Cup Plain Greek Yogurt
6 Tbsp. Cold Butter, cut into cubes + 1 Tbsp. Butter, melted
2 Large Eggs, lightly beaten
3 Tbsp. Poppy Seeds
3 Tbsp. Lemon Extract
1 Tbsp. Baking Powder
3 Tsp. Vanilla Extract
1/2 Tsp. Kosher Salt
Glaze Ingredients
1 Cup Powdered Sugar
3 Tbsp. Fresh Lemon Juice
2 Tbsp. Margarine, melted
Directions
Pre-heat oven to 375F degrees. and spray a baking sheet with cooking spray or line with a silicone baking mat.
In a large bowl, sift together the flour, sugar, poppy seeds, baking powder and salt.
Add the butter and mix using a hand mixer, ensure there are still chunks of butter left. Add the eggs, yogurt, vanilla and lemon extract to the flour mixture and mix. Mix using a fork or whisk then switch to your hands tom combine all.
Roll the dough out into a circle about 1 inch in height and then cut into 8 equal sized wedges. Lay the wedges out on the baking sheet and brush with melted butter.
Bake for 20 minutes or until the sides, bottom become slightly golden.
In a medium bowl, combine all the glaze ingredients and set aside. Remove the scones from the oven and let cool. Once cooled, top with the lemon glaze and enjoy.
