Mushroom Spinach Quesadilla

DISCLAIMER - This dish is super RICH but oh.em.gee is it delicious! I never thought I could like such a simple vegetarian dish SO MUCH! This is a perfect lunch treat for yourself or even your kidlets (if they aren’t picky of course!). Mark actually enjoyed this quesadilla better then the Buffalo Chick Pea quesadilla!

Ingredients

  • 4 Small Tortillas

  • 2 Cups Sliced Mushrooms

  • 1 Cup Fresh Spinach

  • 1-2 Cups Mozza Cheese, shredded

  • 3-4 Tbsp. Cream Cheese

  • 1-2 Tbsp. Margarine

  • Salt & Pepper to taste

Directions

  • In a medium pan, melt margarine over medium heat and add in mushrooms and spinach. Season with salt and pepper.

  • Once cooked to desired softness, transfer to a medium bowl and add in the cream cheese and mozza cheese. Mix well.

  • Lay out 2 Tortillas and top 1/2 of each tortilla with the mushroom/cheese mixture.

  • Fold the other 1/2 of each tortilla over, creating a 1/2 circle and gentle press down. Spray the top lightly with cooking spray.

  • Re-heat the pan over medium heat then add the tortilla, spray side down. Allow to brown slightly then flip very carefully until the other side is gold brown also. Cut in half and serve.
