Bacon Cheddar Mashed Potatoes

Potatoes good. Cheese good. Bacon … GOOD! Throw them all together …. heaven in a bowl. Oh man and Garlic, how on earth could I forget the garlic. I love this dish. It is so simple and easily takes your classic garlic mashed up a notch!

Serving Size: 3 (but let’s be honest they are SO good you aren’t going to want to share them with 2 other people so … you do you!)

Ingredients

  • 3 Russet Potatoes, peeled and cut into 2 inch pieces

  • 1/2 Pack of Bacon, cooked and chopped

  • 1-2 Cups Cheddar Cheese

  • 1/4 Cup Cream Cheese

  • 1/4 Cup Milk

  • 2-3 Tbsp. Margarine

  • 1-2 Tsp. Garlic Powder

  • 1 Tsp. Salt

  • 1 Tsp. Pepper

Directions

  • Boil potatoes in a large pot until soft. Drain and return to pot. Add in the cream cheese, margarine, milk and spices then mash. Add in more margarine or milk if the potatoes are not creamy enough.

  • Add in half of the cheese and combine well so the cheese melts into the potatoes. Add in 3/4 of the bacon and mix together again.

  • Top with remaining cheese and bacon then serve. YUM!
