'Leftover' Shepard's Pie

There is nothing quite like leftovers from Easter or Thanksgiving or Christmas and we enjoy getting creative with the leftovers sometimes … enter Leftover Shepard’s Pie. This baby is and can be loaded with whatever veggies and turkey (or even ham) you have leftover. Add a little gravy, the leftover potatoes and some seasoning and life is good!

Ingredients

  • 1.5 Cups of Leftover Turkey, loosly shredded or ripped into smaller pieces

  • 2 Cups of Leftover Mashed Potatoes

  • 1/2-1 Cup of Gravy

  • 1 Cup of Leftover Veggies (Onions, Corn, Peas, Carrots etc)

  • 1/2 Cup Shredded Mozza or Cheddar Cheese

  • 2 Tsp. JamDinners Turkey Seasoning

  • 1-2 Tsp. Salt

  • 1-2 Tsp. Pepper

  • 1 Tsp. Margarine

  • Garlic or Garlic Powder to taste

  • Dried Parsley for garnish

  • Cooking Spray

Directions

  • Pre-heat oven to 350F degrees. In a medium pan, add in the margarine and melt over medium heat. Add in the leftover veggies and leftover turkey. Combine well.

  • Season the mixture with the turkey seasoning, garlic powder, salt & pepper. Slowly add in the gravy. Allow it to be absorbed but be careful not to add too much because you want it to stay together and remain a fairly thick mixture.

  • Spray a square (8x8) glass casserole dish with cooking spray then scoop the turkey/veggie mixture into the pan and spread evenly. Scoop the mashed potatoes on top and spread evenly.

  • Bake the dish for 20-25 minutes or until potatoes are heated properly. Remove from oven, sprinkle the shredded cheese on top and return to the oven. Broil on LO until cheese is golden brown.

  • Sprinkle with dried parsley if desired and enjoy!
