'Leftover' Shepard's Pie
There is nothing quite like leftovers from Easter or Thanksgiving or Christmas and we enjoy getting creative with the leftovers sometimes … enter Leftover Shepard’s Pie. This baby is and can be loaded with whatever veggies and turkey (or even ham) you have leftover. Add a little gravy, the leftover potatoes and some seasoning and life is good!
Ingredients
1.5 Cups of Leftover Turkey, loosly shredded or ripped into smaller pieces
2 Cups of Leftover Mashed Potatoes
1/2-1 Cup of Gravy
1 Cup of Leftover Veggies (Onions, Corn, Peas, Carrots etc)
1/2 Cup Shredded Mozza or Cheddar Cheese
2 Tsp. JamDinners Turkey Seasoning
1-2 Tsp. Salt
1-2 Tsp. Pepper
1 Tsp. Margarine
Garlic or Garlic Powder to taste
Dried Parsley for garnish
Cooking Spray
Directions
Pre-heat oven to 350F degrees. In a medium pan, add in the margarine and melt over medium heat. Add in the leftover veggies and leftover turkey. Combine well.
Season the mixture with the turkey seasoning, garlic powder, salt & pepper. Slowly add in the gravy. Allow it to be absorbed but be careful not to add too much because you want it to stay together and remain a fairly thick mixture.
Spray a square (8x8) glass casserole dish with cooking spray then scoop the turkey/veggie mixture into the pan and spread evenly. Scoop the mashed potatoes on top and spread evenly.
Bake the dish for 20-25 minutes or until potatoes are heated properly. Remove from oven, sprinkle the shredded cheese on top and return to the oven. Broil on LO until cheese is golden brown.
Sprinkle with dried parsley if desired and enjoy!
