Whipped Feta Olive Dip
Such a simple vegetarian snack to whip (no pun intended) up for NYE!
Ingredients
1 Cup Feta
4oz of Cream Cheese
1 Cup Cherry Tomatoes, halved
1/2 Cup Olives (Kalmata or Manzanilla or a mix)
2-4 Tbsp. EVOO Garlic Infused Olive Oil
2 Tsp. Garlic Powder
2 Tsp. Olive Oil
Salt & Pepper to taste
Directions
Lay the halved tomatoes on a roasting pan, drizzle with olive oil and lightly season with salt and pepper. Broil on low about 10-12 minutes or until softened.
While the tomatoes are broiling, combine the EVOO garlic infused oil (start with just 2 tbsp and add more throughout as needed), garlic powder, cream cheese and feta in a blender or magic bullet. You can even use a really goos immersion blender if you would like. Blend until well mixed.
Spread in a large bowl or plate, lay the roasted tomatoes on the edge and top with the olives. Sprinkle with pepper then lightly drizzle with a little extra garlic olive oil. Serve with toasted bageutte slices.
MAKE IT EASY - Sorry kids - that is about as easy as it gets without just buying the whipped feta dip straight from the store.
MAKE IT EXTRA - Add 1/4 Cup of Olives right into the feta mixture to get the flavors spread out. Use 2-3 cloves of garlic (minced) to replace the garlic powder.
