Jack Fruit Tacos

Okay I LOVE Jackfruit … the Mr …. not so much, but i really love it and take opportunities when he is not home to make recipes using it. These tacos are a super easy vegetarian option for taco Tuesday!

Cook Time: 15-20 minutes

Serving Size: 4-6 Small Soft Tacos

Ingredients

  • 1/2 Can of Young Jackfruit

  • 4-6 Small Tortillas

  • 1 Cup Shredded Iceberg or Romaine Lettuce

  • 1 Avocado, sliced

  • 1/4-1/2 Cup Red Onion, sliced

  • 1/2 Cup Chopped Roma Tomatoes

  • 1/2 Cup Shredded Cheddar Cheese

  • 1 Jalapeno, sliced

  • 1-2 Tsp. Franks or Valentina’s Hot Sauce

  • 1-2 Tsp. JamDinners Taco Seasoning

  • 1-2 Tsp. Vegetable Oil

Directions

  • Drain the can of jackfruit and chop into small pieces giving the impression of ‘pulled pork’. Heat the oil in a medium pan and add the jackfruit. Season the jackfruit with the taco seasoning and allow to cook over medium heat.

  • Add in the hot sauce and mix well, continue cooking over medium heat. Towards the end of cooking you can add the slices of jalapeno to the pan for grilling and additional flavors.

  • While the jackfruit is cooking, prepare your taco toppings.

  • Once the jackfruit has cooked and absorbed the flavor (about 15min minimum) begin dressing your tacos in your desired order. Top with more hot sauce, salsa or sour cream.

MAKE IT EASY - Come on now ….. these are pretty simple!

MAKE IT EXTRA - Marinate the jack fruit with the spices and hot sauce overnight in the fridge. You can also bake the tacos to melt the cheese!
