Harvest Salad
We go salad heavy in the summers. Almost every meal is meat/salad. We especially love it because we BBQ the meat and then there are so few dishes to deal with after dinner. Just because the Fall has hit us …. and it is a GREAT Fall BTW, doesn’t mean we can’t still enjoy delicious, season appropriate salads. The harvest salad is absolutely season appropriate and so delicious.

Ingredients
4-6 Cups Spring Mix, chopped
1 Red Apple, chopped
1 Granny Smith Apple, chopped
3/4 Cup Blue Cheese Vinaigrette Dressing OR a simple Black Cherry Vinaigrette (recipe below)
3/4 Cup Blue Cheese or Feta Cheese
1/2 Cup Pecan halves
1/4 Cup Cranberries
1/4 Red Onion, sliced
1/2 Pack of Bacon, cooked and crumbled
Roasted Butternut Squash, cubed (optional)
Quinoa, cooked
Black Cherry Vinaigrette Dressing Ingredients
1/4 Cup Evoolution Black Cherry Dark Balsamic Vinegar
1/4 Cup Evoolution Picual EVOO
1 Tsp. Dijon Mustard
Salt & Pepper to taste
Directions
Mix dressing ingredients together, set aside.
Divide salad ingredients equally between 2 salad bowls and serve with your favorite protein or enjoy it on it’s own.
