Ham & Pineapple Fried Rice

What a great way to use up some leftover ham and rice (which we did)! All you need is some veggies and canned pineapples.

Ingredients

  • 2 Cups Cooked Ham, cut or ripped into bite sized pieces

  • 4-6 Cups of Cooked Rice

  • 1 Can of Pineapple Chunks, drained

  • 1 Red Pepper, chopped

  • 4 Tbsp. Soy Sauce

  • 1 Tbsp. Evoolution Dark Toasted Japanese Sesame Oil

  • 2 Tbsp. Vegetable Oil

  • 4 Cloves of Garlic, minced

  • 3 Large Eggs

  • 1/2 Bunch of Green Onion, chopped (including the whites of the onion)

Directions

  • Add the vegetable oil to a medium pan, add the peppers and cook over medium heat until soft - approximately 5-7 minutes. Add in the ham and 1/2 of the green onion and cook until the ham slightly browns. Add in the garlic and cook about 1 minute or until fragrant. Remove from the pan and set aside.

  • In the same pan, add a little more vegetable or olive oil and add in the rice, add in the sesame oil. Push the rice to one side and crack the eggs into the other side of the pan and scramble them. Add the ham mixture back in and stir them in with the scrambled eggs and rice. Mix well.

  • Add in the soy sauce and mix well. Remove from the heat and stir in the pineapple chunks and the remaining green onion. Voila.
