Greek Pasta Salad

We are huge fans of Greek Salad but it isn’t overly filling some times. Simply adding pasta helps fill the meal out while still ensuring you get a ton of veggies! Super simple and perfect for those in a rush evenings!

Ingredients

  • 2 Cups uncooked Rotini

  • 1/4 Cup Combined Evoolution Jalapeno & Oregano Infused Olive Oils

  • 1/2 Cup Feta Cheese

  • 1/2 Red Pepper, diced

  • 1/2 Green Pepper, diced

  • 1/2 Cucumber, sliced and cut into 1/4’s

  • 1/2 Red Onion, sliced

  • 8-10 Cherry Tomatoes, cut into halves

  • 8-10 Kalamata Olives, sliced

  • Salt & Pepper to taste

Directions

  • Cook the pasta as per directions on the packaging. Drain water and allow to fully cool. Mix with a tbsp. or two of olive oil to stop the pasta from sticking while it cools.

  • Once fully cooled, combine all remaining ingredients in a large bowl and mix well.
