Creamy Lemon Chicken

We are huge chicken breast fans. We (a family of 2) buy the large boxes of frozen chicken breast even at Costco because of the value and seperate it out into meals. We get about 10 meals out of it and the chicken portions are quite large. Due to the fact we eat a lot of chicken breast, we always have to make sure we are getting creative with the recipes so we don’t get bored. This Lemon Chicken is the perfect switch up that requires very little extra work. Check it out!

Ingredients

  • 2 Chicken Breast

  • 3/4 Cup Cream

  • 1/4 Cup Parmesan Cheese

  • 3-4 Cloves of Garlic, minced

  • 4 Tbsp. Margarine

  • 2 Tbsp. Lemon Juice

  • 1-2 Tbsp. Pepper

  • 1 Tbsp. Garlic Powder

  • 1 Tbsp. Salt

  • 1 Tbsp. Chili Flakes

  • 1 Tbsp. Oregano

  • 1 Tbsp. Parsley

Directions

  • Season both sides of the chicken breasts with salt, pepper & garlic powder.

  • Melt 2 tbsp. of margarine in a pan over medium heat and then add the the chicken breast. Cover and cook about 12-14 minutes, flipping 1/2 way through. Chicken should reach an internal temperature of 165F degrees.

  • Add the garlic and cook about 45-60 seconds. Add in the cream, lemon juice, mix well. Cook about 5-7 minutes or until the mixture begins to thicken without curdling. Add in remaining pepper, oregano and chili flakes.

  • Remove chicken and plate with orzo (or rice) and asparagus. Drizzle the lemon sauce overtop of the whole meal and squeeze a fresh lemon slice overtop as well and lastly sprinkle with the parsley.
