Sweet and Sour Pork

The Mr. loves ordering in Chinese food. It tops his list of favorite foods. I also love Chinese food but what I don’t love is how I feel after, how much leftovers there are and how many calories are in it LOL. So we did some brainstorming and agreed that we could get our ‘fix’ by creating some healthier recipes at home. So here we are, starting with Sweet & Sour Pork. We use the air fryer for it to help with the calories as well and oh my, the smell in the house as exactly what you’d want and expect from a Sweet & Sour Pork meal!

Marinade Ingredients

  • 1lb Pork (3 medium pork chops) cubed into ¾ inch cubes

  • ¼ Cup Soya Sauce

  • ½ tsp Baking Soda

  • ½ tsp Fish Oil

 Other Ingredients

  • 2 Eggs beaten together for egg wash

  • 2 Cups Flour

  • 1 Cup Red Onion, sliced

  • 1 Cup Pineapple, cubed

  • 1 Cup Red/Green/Yellow Peppers, sliced

  • 3-4 Cloves of Garlic, minced

  • 2 Tbsp. Oil

Sauce Ingredients

  • ¼ Cup Ketchup

  • ¼ Cup Vinegar

  • ¼ Cup White Sugar

  • ¼ Cup Water or Chicken Stock

  • 2 Tbsp Plum Sauce

  • 1 Tbsp Corn Starch

  • Salt to taste

Directions

  • Combine all marinade ingredients together in an air tight container and marinate overnight.\

  • The next day, take each piece of pork from the marinade container, dip in the egg wash the the flour mixture. Repeat a second time for each pork cube.

  • Once all pork cubes are battered, spray the tray of your air fryer, lay the pork cubes in a single layer and spray again. Cook for about 20 minutes at 390F degrees. Pausing and shaking it every 5-6 minutes to ensure even cooking.

  • While you are cooking the pork, combine all sauce ingredients in a medium sauce pan and cook over medium heat until bubbling begins.

  • Turn to low and slightly simmer until desired viscosity is reached.

  • Add the sliced vegetables, pineapple, garlic and oil to a frying pan and sauté over medium heat. Once the pork and sauce are fully cooked and desired viscosity of the sauce is achieved, combine the pork and sauce in the pan also and mix well. Serve over rice.
