French Onion Grilled Cheese
If you know Mark at all you know his love for soup … and even more so his love for french onion soup. It seemed only natural that we make a french onion grilled cheese for comfort food month!
Ingredients
4 Slices of Bread
1 Cup of Red Onions, sliced
1-1.5 Cups of Gruyere Cheese, shredded
1/2 Cup Parmesan Cheese, shredded
4 Tbsp. Mayo
1 Clove of Garlic, minced
1 Tsp. Salt
1 Tsp. Pepper
1 Tsp. Garlic Powder
1 Tsp. Butter or Margarine
Directions
In a small frying pan, melt the margarine over medium heat and add the sliced onions. Season with salt, pepper and garlic powder. Saute until soft then remove from heat. Combine the mayo and minced garlic well in a bowl and set aside. Spread a thin layer of the mayo on the outside of 2 of the pieces of bread and lay mayo side down on the same or a different pre-heated frying pan.
Sprinkle half of the cheese evenly on top fo the two slices, then scoop even amounts of the sauteed onions onto each. Sprinkle the remaining half of the cheese evenly on top of the onions.
Lay the other two slices of bread on top and press down slightly. Cook over medium heat until the outside of the bottom pieces of bread start to brown. Right before you are ready to flip, spread the remaining mayo/garlic mixture on the outside of the top pieces. Flip and continue cooking until this new side browns. Remove from the pan, cut in half and serve on their own or with some soup.
MAKE IT EASY - Use mozza cheese instead of gruyere because it is cheaper and easier to find.
MAKE IT EXTRA - Use a fancy bread right from a bakery or even better, make the bread from scratch.
