Coffee Cake
Coffee cake was the first AND only recipe I made in Jr. High HomeEc class and I absolutely loved it. I cannot believe it has taken me this long to recreate it but here you go!
Ingredients
3 Cups Flour
1.5 Cups Brown Sugar
1 Cup Milk
1 Cup White Sugar
1 Cup Oil
1/2 Cup Margarine, melted
2 Eggs, beaten
3 Tsp. Baking Powder
2 Tsp. Pumpkin Spice
2 Tsp. Vanilla
1/2 Tsp. Salt

Directions
Pre-heat oven to 350F degrees. In a large bowl combine the oil. eggs, vanilla and milk. Mix well.
In a separate bowl combine the white sugar, flour, baking powder and salt. In a 3rd bowl, combine the pumpkin spice and brown sugar.
Add the wet mixture to the dry mixture and mix WELL! Pour 1/2 the mixture into a well greased 9X13 baking sheet. Sprinkle half the brown sugar mixture overtop then add remaining batter and sprinkle remaining brown sugar mixture on the top.
Drizzle the top with the melted margarine, ensure fairly well covered. Bake covered with tin foil for 25-30 minutes, remove foil and bake another 10. Sometimes I drizzle a little extra margarine or sprinkle a little more streusel at this step before putting back in the oven for 10 minutes.
Remove and serve with your favorite hot beverage.
