Eggnog Cookies

Eggnog is hands down my top 3 favorite holiday flavors. I make a really wicked Eggnog Cheesecake too which is a recipe I will share later on. These Eggnog Cookies are DROOL WORTHY. I actually made them for a cookie exchange recently too and they received rave reviews from the other ladies. The Mr. said that me participating in a cookie exchange was the most suburban middle aged woman thing EVER … He isn’t wrong lol.

Serving Size: 40-50 Small to Medium Sized Cookies

Cookie Ingredients

  • 3 & 3/4 Cup Flour

  • 1 Cup Margarine, softened

  • 1 Cup Sugar

  • 1 Cup Eggnog

  • 1 Egg, beaten

  • 1 Tsp. Baking Powder

  • 1 Tsp. Baking Soda

  • 1/2 Tsp. Salt

  • 1/2 Tsp. Nutmeg

Frosting Ingredients

  • 1 & 1/2 Cup Powdered Sugar

  • 1/2 Cup Eggnog

  • 1-2 Tsp. Corn Syrup

  • 2 Tsp. Nutmeg

Directions

  • Pre-heat oven to 350F degrees. Mix together margarine and sugar using a hand mixer. Add in eggnog and egg and mix again. Add all remaining dry cookie ingredients.

  • Chill in the fridge for 1 hour.

  • Remove from the fridge and roll into 1inch balls and place on a greased baking sheet. Leaving enough room for them to expand slightly.

  • Bake for 9-11 minutes then remove from the oven. Using a greased small circular item (like the bottom of a flat cup), press down to flatten slightly. Allow to fully cool.

  • While the cookies are cooling, mix all frosting ingredients together really well except the nutmeg. Using a small flat spatula, spread the frosting onto each cookie and then lightly sprinkle with nutmeg. The corn syrup helps the frosting harden but if you want to speed up the process, I recommend placing in the freezer covered for 10-20 minutes after frosting.
