Egg Salad Cucumber Bites

Easy. Healthy(ish). Vegetarian. Such a perfect snack if you ask me!

Prep Time: 20 minutes

Ingredients

  • 1/2 Cucumber, sliced

  • 6 Hard Boiled Eggs

  • 1/4 Cup Green Onion, thinly chopped

  • 2 Tbsp. Mayo

  • 2 Tsp. Yellow Mustard

  • 1-2 Tsp. JamDinners Caesar Rimmer

Directions

  • Peel the hard boiled eggs, mash and then combine with all of the other ingredients together in a bowl except the cucumber slices and green onion.

  • Set aside in the fridge for an hour to allow the flavors to perculate! Once the hour has passed remove from fridge scoop generous helpings onto the cucumber slices, top with the green onion and sprinkle some additional rimmer if desired. Enjoy.

  • MAKE IT EASY - I mean these are already pretty easy but you could opt for a classic celery salt if you don’t have our rimmer. Or use a pre-made egg salad.

    MAKE IT EXTRA - You can make them with a dijon mustard for some heat or finely chop up some celery!
