Burger Ingredients
2 Calabrese Buns
2 Slices of Bacon, cooked and halved
2 Slices of Old White Cheddar
1/4 Red Onion, sliced
Iceberg Lettuce, washed and ripped to fit burger size
Directions
Combine all aioli ingredients together, mix well and set in the fridge until ready to serve - at least 1 hour.
Next, combine the ground beef with 1/2 of the steak spice, mix well and form into 2 even patties. Lay flat on a parchment lined tray or plat. Season both sides of both patties with the remaining steak spice and decently heavy doses on pepper. Allow to set in the fridge for at least 30 minutes.
For fried pickle slices, on 2 separate plates sprinkle out the bread crumbs and the flour. Also whisk the egg into a small bowl. Fully cover a pickle slice in the flour mixture, then dredge in the egg mixture and lastly roll in the bread crumbs until fully covered them lay out on a tray or plate. Repeat for all pickle slices.
Add the vegetable oil to a pan and heat up to about 350F degrees. Once up to temp, lay the battered pickles in the pan and cook on one side until browned perfectly, flip and then repeat for the other side. Cook about 20 minutes and continue to watch the temperature of the oil.
While the pickles are cooking, heat up the BBQ to approx. 450F degrees. Spray with cooking spray then lay the burger patties on the grill. Cook about 20 minutes or until fully cooked on the inside, flipping half walk through. At the end, add a slice of white cheddar to each burger, allow it to melt and then remove the patties from the grill.
Lightly spray the buns and lightly toast them on the BBQ top shelf too while cooking the burger patties - about 5 minutes.
Your burger is now ready to assemble. Start by spreading the aioli on the top and bottom buns, add onion and lettuce to the bottom bun then top with the burger patty and then the fried pickles (and bacon if you got it!). Serve with chips, cactus cut potatoes or fries!
