Dill & Dijon Potato Salad

Summer time screams BBQ season! A great side dish for BBQ season are macaroni salads or potato salads .. and damn are they good. The only problem with both of those is they typically end up being creamy dishes which can feel quite heavy when you are eating them am I right? This Dill and Dijon Potato Salad is the perfect compromise. You still get a WICKED tasty potato salad side dish without all of the weight. The Dill really adds a ton of flavor to this dish, it is jam packed! I really shouldn’t have called it a compromise because it will be the ONLY potato salad you want as a side dish this summer!

Ingredients

  • 1 bag of small Red or White Potatoes, cut into halves or quarters

  • 1/2 Red Onion, sliced

  • 3/4 Cup Fresh Dill, chopped

  • 1/2 Cup Olive Oil

  • 1/4 Cup Fresh Parsley, chopped

  • 2-3 Tsp. Dijon Mustard

  • 2 Tsp. Vinegar

  • 1-2 Tsp. Pepper

  • 1-2 Tsp. Salt

Directions

  • Boil potatoes in a large pot of water on the stove until soft. Drain potatoes, place in a large bowl and allow to cool for minimally 1 hour.

  • Once potatoes are cooled, add in parsley, dill and red onion. Mix well.

  • In a small bowl combine vinegar, oil, mustard and spices and whisk together until blended. Drizzle over potato mixture and combine well. Allow to sit in the fridge 1 hour prior to serving. Grind additional pepper on top as desired.
