Crispy Hot Honey Chicken Sandwich
I have been loving the Hot Honey from the Honey Merchants so you KNOW I had to incorporate it somehow in Burger week this year … BOOM!

Serving Size: 2 Burgers
Hot Honey Glaze Ingredients
1/2 Cup Hot Honey
2-4 Tsp. Franks Hot Sauce
Chicken Ingredients
2 Chicken Breast, flattened to ensure even cooking
1 Egg
3/4 Cup Flower
1 Cup Bread Crumbs
Salt & Pepper to taste
2-4 Cups of Vegetable Oil (enough to have about 1 inch of oil to cook in)
Burger Ingredients
2 Kaiser Buns
Butter Lettuce
Tomato Slices
Red Onion, sliced
2 Slices of White Cheese
Mayo for dressing the Buns
Directions
Heat the vegetable oil in a pan until oil temperature has reached approx. 375F.
While the oil is heating up, dry the flattened chicken breast, dredge in flour/salt/pepper mixture ensuring even coating, then dredge in the egg mixture, again ensuring even coverage and lastly complete the same for the bread crumb mixture. Set aside and then carefully add to the hot oil once desired temperature is reached.
Cook the chicken over medium heat until 165F internal temperature is achieved. Flip the chicken 1/2 was through to ensure even cooking and browning. When the chicken is done, lay on a rack over a baking sheet to drip any excess oil the brush with desires hot honey (we went fairlyu heavy). Next place a slice of cheese on each breast then place in a slightly heated oven to melt the cheese.
While the chicken is cooking, combine the hot honey and hot sauce in a small pot and mix well over low heat. Allow to sit there until desired.
Lightly toast the buns and then dress them with the mayo, lettuce and tomato. (even butter pickles if desired). Add the chicken and serve with a garden salad.
